Chocolate
Truffles
for
Valentine's Day
15 min prep – 2 hrs. chill
¼ cup heavy whipping cream
2 bars (8 oz.) bittersweet chocolate baking bars, broken into pieces – Ghirardelli recommended
6 tblsp unsalted butter, in small pieces
1/3 cup Ghirardelli unsweetened cocoa
In small saucepan, bring cream to a simmer. Remove from heat and stir in chocolate and butter. Use a double boiler to melt all together. Remove from heat and pour into a shallow bowl and let chill in fridge for at least 2 hours. Pour cocoa in a pie plate. Dip a melon scooper (or small spoon) into a glass of warm water and quickly scrape across the surface of the chilled truffle mixture and drop the ball in the cocoa. Shake the pie plate to coat the truffle. Place in an airtight container. Repeat with the rest of the truffle mixture. They will keep for 2 weeks, if refrigerated.
